Indoor Grilled Lamb Chops

T-bone lamb chops, spinach that was sautéed in EVOO and chopped fresh garlic. I "refreshed" the twice baked potatoes from Sunday by taking the filling out, adding a little more milk to it and reheating it in the microwave before re-stuffing the potato skins and broiling).


I seasoned the lamb chops by bathing them in the juice of half a fresh lemon (turning) and sprinkling dried oregano, garlic and pepper with just a hint of salt; then I grilled them on my grill pan. Unbelievable flavor! IMO lemon/oregano is too strong for chicken but that's the only way I've done it before... now I understand it really did originate as a lamb seasoning. I'm making lamb chops that way again!
